Tea is meditation, a break from the rush of day-to-day life. Brew this classic from China in a glass pot, watch the Jasmine blossoms swirl gently over the green leaves, and contemplate the first snow of winter.
This tea is known as "Bi Tan Piao Xue", meaning "Emerald Pond, Floating Snow". The high-grade, spring-picked green tea is scented with a batch of Jasmine flowers for 3 days, and the process is repeated 5 times, so that the Jasmine scent is fully absorbed into the leaves. After that, new Jasmine flowers are added to the scented leaves to complete the tea.
Brewing this tea with cooler water will bring out more sweetness from the green tea, to contrast with the sharpness of the Jasmine.
